Little Debbie, move over!
OOOOPPPPPPSSSSS! I thought I'd get a head start on the game and do some pre-baking for Christmas and put the goodies in the freezer. Well, I made *Cherry Balls* I meant to double the recipe and realized that I put way too much butter in the mix and ended up making 4x the recipe! I ran out of coconut and icing sugar and had to run to the store, I was in my PJ's cause I had to get there ASAP! I covered them the best I could with splash suit pants. No one caught me! Came back and mixed it into a much larger bowl! I was only trying to make about 5 dozen and ended up with 11 3/4 dozen. I thought I'd do something a little different and dip one end in CHOCOLATE and the other side in graham wafer crumbs, they kinda look like little acorns! ( Tall Oaks from little acorns grow.-Chinese proverb. I have a greater chance of growing wider! LOL) Any how what I thought would only take 1/2 hour to make ended up taking almost 5 hours! All in all it was fun I had the Christmas music playing in the background, and just thought of how fun it will be next year making cookies with a little help from Callie.
In the last couple of weeks I've made 15 dozen Neiman Marcus chocolate cookies, 1 tray rockyroad squares, 2 batches of scotch cookies, 1 tray of nanaimo bars, and 2 batches of plain cherry balls and put them all in the freezer.
All I have left to make before Christmas are my Chocolate Chip Banana Bread and Meat Pies. I don't like them in the freezer for very long so I'll hold off another 3-4 weeks. My two sister-in-laws look forward to a loaf of Banana Bread each year as a treat the week of Christmas.
You have to try making the Neiman Marcus Chocolate Chip Cookie, There is a really cool story as to how the recipe became known. I'll post it if you want the recipe.
